Saffie's Yellow Cake Mix The dairy free version is very moist. Make it in advance, store in the freezer and you have your own ready-made cake mix.
Simple Yellow Cake - Non Dairy Version
 
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup sugar (if you want a sweet cake add another 1/2 cup)
 
3 large eggs
1 cup soy milk, almond milk or apple juice for non-dairy diets 
1/2 cup olive oil (or light oil like canola)
1 teaspoon vanilla extract
 
Put the dry ingredients in the mixer with the whisk attachment and run it on low to sift ingredients.  Add the eggs, milk or milk substitute and olive oil and mix together.  
 
Pour into 2 - 8 inch pans that have been oiled and floured.  Bake at 350 for 35 minutes.
 
Note:  I mix up the dry ingredients in my mixer and put into a ziplock bag in the freezer.  It is better than the box mix...

1/2 teaspoon salt
1 cup sugar (if you want a sweet cake add another 1/2 cup)
 
3 large eggs
1 cup milk
1 stick butter - softened
1 teaspoon vanilla extract
 
Cream sugar and butter together.  Add eggs and mix together.  Add Flour, baking powder and salt and mix.  Pour in milk and vanilla and mix
Pour into 2 - 8 inch pans that have been oiled and floured.  Bake at 350 for 35 minutes.
